Simple Protein Coconut Balls

Ingredients

1½ cups (140g) + 3 tbsp. shredded coconut, unsweetened

½ cup (60g) almond flour

2 tbsp. vanilla plant based protein powder

3 tbsp. maple syrup

3 tbsp. water


Preparation

1. Place all the ingredients into a bowl, except for the additional 3 tablespoons of shredded coconut.

Form the mixture into 20 balls the size of a walnut, and roll the balls in the remaining shredded coconut.

2. Place the balls on a baking sheet lined with parchment paper and refrigerate for 2 hours before serving.
